This recipe (and amazing photo) is from Lisa Bryan and her website, Downshiftology. Lisa is the supreme queen of paleo food prep on YouTube. Seriously, go watch her videos, it is a logistical feat to behold.
While I am not nearly as on top of it as Lisa, her recipes are great to peruse when I am looking for something really healthy to try. Ok, so this particular recipe isn’t the healthiest, but it’s not bad for being a chocolate cake. The metaphorical icing on it (or literal, whatever your in the mood for) is that the ingredients are all pretty common pantry/fridge staples and it only takes about 5 minutes to make. That means that whenever I have a craving for some chocolate cake, I return to this recipe again and again. An additional bonus: it’s great for when you live alone and/or want cake but don’t want an entire cake. You know?
Ingredients:
- 1/4 cup almond flour
- 2 Tbsp cocoa powder
- 2 Tbsp maple syrup
- 1 tsp coconut oil
- 1 tsp vanilla extract
- 1 large egg
Instructions:
- Mix all ingredients together in a bowl until well combined. You can also do this within the mug itself if you want to reduce the number of dirty dishes you have to deal with.
- Microwave for 1-2 minutes until cake is cooked through.
- Bon appétit! Leave the cake for a couple of minutes to cool, since the interior of the cake will be lava hot coming out of the microwave (learn from my mistakes). Top with whatever you are in the mood for and enjoy! I prefer fresh fruit and whipped cream if I have it.
