I finally got this recipe where I wanted it and took photos of the finished product several months ago, but I haven’t posted it because I was telling myself I shouldn’t post two breakfast recipes in a row. Well, it took me until now to realize the whole point of this blog was to share what I wanted and not try to force any “rules of blogging” on myself. So here it is: another breakfast recipe, because I love breakfast!
I won’t bore you with much more of an introduction than that; I also hate when I have to scroll down a recipe post for five minutes to get to the actual food. So here is the food! It’s an easy and delicious paleo alternative to overnight oats. For anyone who doesn’t know: I found out that wheat/grain products were a trigger for my chronic headaches a few years ago, so I now eat a “paleo based” diet.
Ingredients
- 1 ripe banana
- 1/4 cup flaxseed meal
- 1 1/2 Tbsp chia seeds
- 1/4 cup chopped pecans (or other nut of your choice)
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 3/4 cup coconut milk (or other non-dairy milk of your choice)
Instructions
- In a medium to large size bowl: smash the banana with a fork until mushy.
- Add the remaining ingredients and mix well.
- Cover and let sit in fridge overnight.
- That’s it!
This recipe makes about 2 servings worth, but you can easily double or triple the recipe and keep it in your fridge for the week. Toppings are a personal choice; it’s a pretty mild flavor that pairs well with almost anything! I like to do sliced banana, whatever berries or fruit were on sale that week (or microwave some frozen fruit), pepitas, cacao nibs, and a drizzle of honey or maple syrup.
